
Pizza Egg Rolls

Prepare the fillingIn a medium bowl, combine the shredded mozzarella, chopped pepperoni, crumbled sausage, diced bell pepper, diced red onion, Parmesan cheese, Italian seasoning, and garlic powder. Mix well until everything is evenly distributed.

Assemble the egg rollsPlace an egg roll wrapper on a clean, flat surface with one corner pointing toward you (diamond position). Spread about 1 tablespoon of pizza sauce in the center of the wrapper. Add about 2 tablespoons of the filling mixture on top of the sauce.

Fold and sealFold the bottom corner over the filling, then fold in the side corners. Roll tightly toward the top corner. Brush the top corner with beaten egg to seal. Repeat with remaining wrappers and filling.

Heat the oilIn a large, deep skillet or Dutch oven, heat about 2 inches of vegetable oil to 350°F (175°C). Use a thermometer to ensure proper temperature.

Fry the egg rollsCarefully place 3-4 egg rolls in the hot oil, being careful not to overcrowd. Fry for 2-3 minutes per side until golden brown and crispy. Use tongs to turn them over halfway through cooking.

Drain and coolRemove the fried egg rolls with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Allow to cool slightly before serving.

Serve with dipping sauceWarm the remaining pizza sauce in a microwave-safe bowl for about 30 seconds. Serve the egg rolls with the warm pizza sauce for dipping.
