Instructions

  1. Prepare the base mixture
In a heavy-bottomed pan, melt the ghee over medium heat. Add the milk powder and stir continuously to avoid lumps. Cook for about 2-3 minutes until the mixture is well combined.
  2. Add condensed milk
Pour in the condensed milk and stir well. Continue to cook the mixture on medium-low heat, stirring constantly to prevent it from sticking to the bottom of the pan.
  3. Cook until thickened
Cook the mixture for about 15-20 minutes, stirring continuously, until it thickens and starts to leave the sides of the pan. The mixture should form a soft dough-like consistency that doesn't stick to your fingers when touched.
  4. Add flavorings
Add the ground cardamom and saffron-soaked milk (if using). Mix well to distribute the flavors evenly throughout the mixture. Remove from heat and let it cool for 5 minutes until it's comfortable to handle.
  5. Shape the pedas
Once the mixture is cool enough to handle but still warm, divide it into equal portions (about 2 tablespoons each). Roll each portion into a smooth ball, then flatten slightly and press your thumb in the center to create a small depression.
  6. Garnish and set
Place a few chopped pistachios and almonds in the depression of each peda. If using silver foil, place a small piece on top of each peda. Let the pedas cool completely and set for at least 1 hour before serving.
