  1. Sauté the vegetables
    Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables have softened, about 5-7 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  2. Prepare the broth
    Pour in the chicken broth and add the bay leaf and dried thyme. Bring the mixture to a boil, then reduce heat to maintain a gentle simmer. Season with salt and pepper to taste. Let simmer for 15 minutes to allow the flavors to meld together.
  3. Cook the pastina
    Once the broth has simmered, add the pastina to the pot. Cook according to package instructions, usually about 5-6 minutes, stirring occasionally to prevent the pasta from sticking to the bottom of the pot.
  4. Add the chicken
    If using, add the shredded chicken to the soup and continue to simmer until the chicken is heated through, about 2-3 minutes.
  5. Finish and serve
    Remove the bay leaf. Stir in the fresh chopped parsley. Ladle the hot soup into bowls and top each serving with a sprinkle of grated Parmigiano-Reggiano cheese. Serve immediately with crusty Italian bread on the side if desired.
