A comforting Italian soup with tiny pasta stars
Ingredients
Instructions
-
Sauté the vegetablesHeat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables have softened, about 5-7 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant.
-
Prepare the brothPour in the chicken broth and add the bay leaf and dried thyme. Bring the mixture to a boil, then reduce heat to maintain a gentle simmer. Season with salt and pepper to taste. Let simmer for 15 minutes to allow the flavors to meld together.
-
Cook the pastinaOnce the broth has simmered, add the pastina to the pot. Cook according to package instructions, usually about 5-6 minutes, stirring occasionally to prevent the pasta from sticking to the bottom of the pot.
-
Add the chickenIf using, add the shredded chicken to the soup and continue to simmer until the chicken is heated through, about 2-3 minutes.
-
Finish and serveRemove the bay leaf. Stir in the fresh chopped parsley. Ladle the hot soup into bowls and top each serving with a sprinkle of grated Parmigiano-Reggiano cheese. Serve immediately with crusty Italian bread on the side if desired.
