Prepare the turnipsPeel the turnips and cut them into ½-inch thick fries. For even cooking, try to make them all approximately the same size. Place them in a large bowl of cold water for 10 minutes to remove some of the bitterness, then drain thoroughly and pat dry with paper towels.

Season the friesPreheat your oven to 425°F (220°C). In a large bowl, toss the dried turnip fries with olive oil until well coated. In a separate small bowl, mix together the Parmesan cheese, garlic powder, Italian herbs, smoked paprika, cayenne pepper (if using), salt, and black pepper. Add this mixture to the turnips and toss until evenly coated.

Arrange and bakeLine a large baking sheet with parchment paper. Arrange the seasoned turnip fries in a single layer, ensuring they don't overlap. This allows them to crisp up properly. Bake in the preheated oven for 15 minutes.

Flip and finish bakingAfter 15 minutes, remove the baking sheet from the oven. Carefully flip each fry using tongs or a spatula. Return to the oven and bake for an additional 10-12 minutes, or until the fries are golden brown and crispy on the edges.

ServeRemove from the oven and let cool for 2-3 minutes. Sprinkle with additional Parmesan cheese and fresh parsley. Serve immediately while hot and crispy. These fries are delicious on their own or with a side of garlic aioli or marinara sauce for dipping.
