Norwegian Lingonberry Porridge
Sweet and tangy traditional Scandinavian comfort food
Ingredients
Instructions
-
Prepare the berriesIn a large saucepan, combine the lingonberries and 1 cup of water. Bring to a simmer over medium heat. Cook for about 5 minutes until the berries begin to burst and release their juices.
-
Sweeten the mixtureAdd the sugar to the simmering berries and stir until completely dissolved. Reduce heat to low and add the cinnamon and cardamom. Let the mixture simmer for another 5 minutes to infuse the flavors.
-
Thicken the porridgeIn a small bowl, combine the potato starch with 2 tablespoons of cold water to create a slurry. Slowly pour this mixture into the simmering berries while whisking constantly to prevent lumps from forming. Continue to stir until the porridge thickens, about 2-3 minutes.
-
Finish and flavorOnce the porridge has reached a thick, pudding-like consistency, remove from heat and stir in the vanilla extract. If the porridge becomes too thick, add a little warm water and stir to achieve desired consistency.
-
Cool and serveAllow the porridge to cool slightly before serving. It can be served warm or cold, traditionally with a splash of cold heavy cream poured over the top and a sprinkle of pearl sugar for texture and added sweetness.
