  1. Prepare the berries
    In a large saucepan, combine the lingonberries and 1 cup of water. Bring to a simmer over medium heat. Cook for about 5 minutes until the berries begin to burst and release their juices.
  2. Sweeten the mixture
    Add the sugar to the simmering berries and stir until completely dissolved. Reduce heat to low and add the cinnamon and cardamom. Let the mixture simmer for another 5 minutes to infuse the flavors.
  3. Thicken the porridge
    In a small bowl, combine the potato starch with 2 tablespoons of cold water to create a slurry. Slowly pour this mixture into the simmering berries while whisking constantly to prevent lumps from forming. Continue to stir until the porridge thickens, about 2-3 minutes.
  4. Finish and flavor
    Once the porridge has reached a thick, pudding-like consistency, remove from heat and stir in the vanilla extract. If the porridge becomes too thick, add a little warm water and stir to achieve desired consistency.
  5. Cool and serve
    Allow the porridge to cool slightly before serving. It can be served warm or cold, traditionally with a splash of cold heavy cream poured over the top and a sprinkle of pearl sugar for texture and added sweetness.
