
Norwegian Cardamom Buns
Sweet, fragrant buns with a swirl of cardamom and butter

Prepare the doughIn a large bowl, combine flour, sugar, cardamom, and salt. In a separate bowl, dissolve yeast in warm milk. Let stand for 5 minutes until foamy. Add the melted butter and egg to the milk mixture. Pour the wet ingredients into the dry ingredients and mix until a soft dough forms.

Knead the doughTurn dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour or until doubled in size.

Prepare the fillingWhile the dough rises, mix the softened butter, sugar, and cardamom in a small bowl until well combined. Set aside at room temperature.

Shape the bunsPunch down the dough and roll it out on a floured surface to a 16x20 inch rectangle. Spread the cardamom-butter mixture evenly across the surface, leaving a 1/2 inch border. Roll the dough tightly from the long side to form a log. Cut into 12 equal pieces.

Second risePlace the buns on parchment-lined baking sheets, leaving space between each bun. Cover with a clean towel and let rise for another 30-45 minutes until puffy.

Bake the bunsPreheat oven to 375°F (190°C). Brush the buns with egg wash and sprinkle with pearl sugar. Bake for 12-15 minutes until golden brown. Transfer to a wire rack to cool slightly before serving.
