  1. Prepare the base mixture
    In a medium saucepan, whisk together milk, sugar, cocoa powder, espresso powder, and salt. Place over medium heat and bring to a simmer, stirring frequently until sugar is completely dissolved.
  2. Add chocolate
    Remove from heat and add chopped chocolate. Let stand for 1 minute, then whisk until chocolate is completely melted and mixture is smooth. Stir in vanilla extract.
  3. Create the fudge swirl
    In a small saucepan, combine heavy cream, corn syrup, and butter. Bring to a simmer over medium heat, then reduce heat to low. Add 2 ounces of the chopped chocolate and stir until melted and smooth. Transfer to a small bowl and let cool slightly.
  4. Chill the mixtures
    Transfer the mocha base to a bowl and let cool to room temperature, then cover and refrigerate until cold, about 1 hour. Also refrigerate the fudge mixture until slightly thickened but still pourable, about 30 minutes.
  5. Assemble and freeze
    Pour a small amount of the mocha mixture into each popsicle mold, filling about 1/3 of the way. Add a small spoonful of the fudge mixture, then continue layering until molds are filled, leaving 1/4 inch of space at the top. Use a skewer or knife to gently swirl the mixtures together.
  6. Insert sticks and freeze
    Insert popsicle sticks and freeze until completely solid, at least 6 hours or overnight for best results. To unmold, run warm water over the outside of the mold for a few seconds, then gently pull the popsicles out.
