
Mediterranean Lamb Nachos
A Middle Eastern twist on a classic Mexican favorite

Prepare the spiced lambHeat olive oil in a large skillet over medium heat. Add diced onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for another 30 seconds until fragrant. Add ground lamb, breaking it up with a wooden spoon, and cook until browned, about 8 minutes.

Season the meatOnce the lamb is browned, add cumin, coriander, and cinnamon. Stir to combine and cook for another 2 minutes to allow the spices to bloom. Season with salt and pepper to taste. If there's excess fat, drain it before proceeding.

Prepare the toppingsWhile the lamb is cooking, combine diced tomatoes, cucumbers, Kalamata olives, half of the chopped mint, and lemon juice in a small bowl. Mix well and set aside to allow flavors to meld together.

Assemble the nachosPreheat oven to 350°F (175°C). Arrange pita chips in a single layer on a large, oven-safe platter or baking sheet. Sprinkle half of the feta cheese over the chips.

Layer the toppingsSpoon the seasoned lamb mixture evenly over the pita chips and feta. Sprinkle the remaining feta cheese on top of the lamb.

Warm the nachosPlace the platter in the preheated oven for 5-7 minutes, just until the cheese begins to soften and the chips are warmed through. Don't leave it too long or the chips will become soggy.

Add fresh ingredientsRemove from the oven and immediately top with the tomato-cucumber mixture. Dollop tzatziki sauce over the top or serve it on the side for dipping.

Finish and serveGarnish with the remaining fresh mint. Serve immediately while still warm, with extra tzatziki sauce on the side for dipping.
