Prepare the ingredientsPreheat oven to 350°F (175°C). In a large bowl, combine ground beef, diced onion, minced garlic, beaten eggs, breadcrumbs, 1/3 cup ketchup, Worcestershire sauce, parsley, thyme, 1 teaspoon salt, and 1/2 teaspoon pepper. Mix gently with your hands until just combined, being careful not to overmix.

Form the meatloafLine a baking sheet with parchment paper or aluminum foil. Form the meat mixture into a loaf shape approximately 9x5 inches on the prepared baking sheet. In a small bowl, mix the remaining 1/2 cup ketchup with brown sugar and Dijon mustard for the glaze.

Bake the meatloafBrush half of the glaze over the top of the meatloaf. Bake for 40 minutes, then brush with remaining glaze. Continue baking for an additional 15-20 minutes or until the internal temperature reaches 160°F (71°C) when tested with a meat thermometer. Allow to rest for 10 minutes before slicing.

Prepare the potatoesWhile the meatloaf is baking, place the peeled and cubed potatoes in a large pot and cover with cold water. Add 1 teaspoon salt and bring to a boil. Reduce heat to medium and simmer until potatoes are fork-tender, about 15-20 minutes.

Make the mashed potatoesDrain the potatoes thoroughly and return them to the hot pot. Add the butter and mash the potatoes using a potato masher or ricer. Gradually add the warm milk while continuing to mash until smooth and creamy. Season with salt and pepper to taste.

Serve the dishSlice the meatloaf into 1-inch thick portions and serve alongside a generous scoop of mashed potatoes. Garnish with additional chopped parsley if desired.
