  1. Prepare the macaron shells
    Sift together the almond flour and confectioners' sugar into a large bowl. In a separate bowl, beat half of the egg whites until foamy. Add the almond-sugar mixture to the egg whites and fold gently to create a thick paste. Divide this mixture into separate bowls if making different colored macarons.
  2. Make the Italian meringue
    In a small saucepan, combine granulated sugar and water. Heat until the syrup reaches 118°C (244°F). Meanwhile, beat the remaining egg whites to soft peaks. Once the syrup reaches temperature, slowly pour it into the egg whites while continuing to beat until the meringue is glossy and forms stiff peaks.
  3. Complete the macaron batter
    Add gel food coloring to the meringue if desired. Gently fold the meringue into the almond paste mixture until the batter flows like lava - when lifted, it should fall in a continuous ribbon and reabsorb into the batter within 30 seconds. Transfer to piping bags fitted with round tips.
  4. Pipe and bake the shells
    Pipe 3-4cm rounds onto baking sheets lined with parchment paper or silicone mats. Tap the sheets firmly against the counter to release air bubbles. Let the shells rest for 30-45 minutes until they form a skin. Preheat oven to 150°C (300°F) and bake for 12-15 minutes. Cool completely before removing from the baking sheet.
  5. Prepare the fillings
    For ganache filling: Heat cream until steaming, pour over chopped white chocolate, let sit for 1 minute, then stir until smooth. Add vanilla and cool until spreadable. For buttercream: Beat softened butter until fluffy, gradually add 150g sifted confectioners' sugar, and flavor as desired. Divide and color the fillings to match or complement the shell colors.
  6. Assemble the macarons
    Match macaron shells of equal size. Pipe a small amount of filling onto one shell, then sandwich with another shell. Refrigerate filled macarons for at least 24 hours to mature the flavors and achieve the perfect texture.
  7. Construct the tower
    Place the prepared foam cone on a serving platter. Starting from the bottom, attach macarons to the cone using small dots of melted white chocolate as glue. Work your way up in concentric circles, alternating colors for a visually stunning effect. Leave small gaps for inserting berries or flowers as you build.
  8. Decorate and finish
    Once all macarons are attached, fill any gaps with fresh berries, edible flowers, or additional piped details. Dust lightly with edible gold dust for an elegant finish. Allow the chocolate to set completely before serving, keeping the tower away from direct heat and sunlight.
