  1. Prepare the simple syrup
    In a medium saucepan, combine the sugar and water. Bring to a simmer over medium heat, stirring occasionally until the sugar completely dissolves, about 5 minutes. Remove from heat and let cool completely.
  2. Mix the ingredients
    In a large bowl, combine the cooled simple syrup with the freshly squeezed lime juice, lime zest, corn syrup, vodka (if using), and salt. Whisk until thoroughly mixed.
  3. Chill the mixture
    Cover the bowl and refrigerate the mixture for at least 2 hours, or until very cold. This step is crucial for achieving the best texture in your sorbet.
  4. Churn in ice cream maker
    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes or until the sorbet has reached a soft-serve consistency.
  5. Freeze until firm
    Transfer the sorbet to an airtight container. Press a piece of parchment paper directly on the surface of the sorbet (to prevent ice crystals), cover, and freeze until firm, at least 2 hours or overnight.
  6. Serve and garnish
    Before serving, let the sorbet sit at room temperature for 5 minutes to soften slightly. Scoop into chilled bowls or glasses and garnish with fresh mint leaves and lime slices if desired.
