Instructions

  1. Cook the pasta
Bring a large pot of heavily salted water to a boil. Add the pasta and cook until al dente according to package instructions, usually 8-10 minutes. Reserve 1/2 cup of pasta water before draining.
  2. Prepare the lemon sauce
While the pasta is cooking, melt the butter with olive oil in a large skillet over medium heat. Add the lemon zest and cook for 1 minute until fragrant. Add the cream and bring to a gentle simmer. Reduce heat to low and simmer for 2 minutes.
  3. Finish the sauce
Remove the skillet from heat and whisk in the lemon juice, Parmesan cheese, salt, black pepper, and red pepper flakes if using. If the sauce is too thick, add a splash of the reserved pasta water.
  4. Combine pasta and sauce
Add the drained pasta directly to the skillet with the sauce. Toss thoroughly to coat each strand with the lemon sauce. If needed, add more reserved pasta water a tablespoon at a time to create a silky consistency.
  5. Add finishing touches
Stir in the chopped basil. Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice to your preference.
  6. Serve
Serve immediately in warmed bowls. Garnish with additional Parmesan cheese, fresh basil leaves, and a grind of black pepper. For an extra touch of brightness, add a small slice of lemon on top of each serving.
