
Lemon Mint Panna Cotta

Prepare the gelatinIn a small bowl, sprinkle the gelatin over the cold water and let it stand for 5-10 minutes until it becomes spongy and absorbs the water (this is called blooming).

Heat the cream mixtureIn a medium saucepan, combine the heavy cream, milk, sugar, and salt. Warm over medium heat, stirring frequently until sugar dissolves completely. Do not let the mixture boil.

Add flavoringsRemove from heat and stir in the lemon zest, lemon juice, chopped mint leaves, and vanilla extract. Let the mixture steep for 5 minutes to infuse the flavors.

Incorporate gelatinReheat the cream mixture until just warm (not boiling). Add the bloomed gelatin and stir until completely dissolved, about 2 minutes.

Strain and portionStrain the mixture through a fine-mesh sieve into a large measuring cup or bowl to remove the mint leaves and lemon zest. Pour the strained mixture evenly into six ramekins or dessert cups.

Chill until setCover each ramekin with plastic wrap and refrigerate for at least 4 hours or overnight until the panna cotta is completely set.

ServeTo serve, run a thin knife around the edge of each ramekin and invert onto dessert plates. If they don't release easily, dip the bottom of each ramekin in hot water for 10-15 seconds. Garnish with fresh berries and mint sprigs if desired.
