  1. Prepare the aromatics
    Heat oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown, about 5-7 minutes. Add the minced garlic, grated ginger, and green chilies, and cook for another 2 minutes until fragrant.
  2. Cook the meat
    Add the lamb or beef mince to the pot and break it up with a wooden spoon. Brown the meat for about 5-7 minutes, stirring frequently until no longer pink. Drain excess fat if necessary.
  3. Add spices and tomatoes
    Add the diced tomatoes, cumin powder, coriander powder, turmeric powder, and salt and pepper to taste. Stir well and cook for 5 minutes until the tomatoes have softened and the spices are fragrant.
  4. Simmer the soup
    Pour in the broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes to allow flavors to meld together and the meat to become tender.
  5. Add vegetables
    Add the diced mixed vegetables to the soup and continue to simmer for another 10 minutes until the vegetables are tender but not mushy.
  6. Finish with garam masala
    Stir in the garam masala and half of the chopped cilantro. Simmer for an additional 2 minutes to incorporate the flavors.
  7. Serve
    Ladle the hot soup into bowls, garnish with the remaining fresh cilantro, and serve with a side of naan bread or rice if desired.
