  1. Prepare the oysters
    Clean the oysters thoroughly under cold running water, removing any shell fragments. Pat them dry with paper towels to remove excess moisture, which is crucial for good breading adhesion.
  2. Set up breading station
    Prepare three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with panko breadcrumbs. Arrange them in that order for an efficient breading process.
  3. Bread the oysters
    Coat each oyster first in flour, shaking off excess. Then dip in beaten egg, letting excess drip off. Finally, roll in panko breadcrumbs, pressing gently to ensure even coating. Place breaded oysters on a plate and let rest for 5 minutes.
  4. Heat the oil
    In a deep, heavy-bottomed pan, heat vegetable oil to 350°F (175°C). Use enough oil to submerge the oysters completely. Test the oil by dropping a few breadcrumbs - they should sizzle and float immediately.
  5. Fry the oysters
    Carefully place breaded oysters in the hot oil, working in batches to avoid overcrowding. Fry for 2-3 minutes until golden brown and crispy. Turn them gently to ensure even cooking on all sides.
  6. Drain and rest
    Remove fried oysters with a slotted spoon and place on a wire rack or paper towel-lined plate to drain excess oil. Allow them to rest for 1-2 minutes before serving.
  7. Prepare the sauce
    In a small bowl, mix together tonkatsu sauce (or Worcestershire sauce), ketchup, and mayonnaise until well combined. Adjust proportions to taste if desired.
  8. Serve
    Arrange shredded cabbage on serving plates, place hot kaki fry on top, and serve immediately with the sauce and lemon wedges on the side. The lemon juice adds brightness and complements the rich, fried oysters perfectly.
