  1. Prepare the patties
    In a large bowl, combine ground beef, diced jalapeños, garlic powder, onion powder, cumin, Worcestershire sauce, salt, and pepper. Mix gently with your hands until just combined, being careful not to overwork the meat. Divide into 4 equal portions and form into patties about 1/2 inch thick, making a slight depression in the center with your thumb to prevent the burgers from doming up during cooking.
  2. Make the spicy mayo
    In a small bowl, mix the mayonnaise with lime juice and chipotle powder (if using). Stir until well combined and set aside to let the flavors meld while you cook the burgers.
  3. Cook the burgers
    Preheat a grill or skillet to medium-high heat. Cook the patties for about 4 minutes on the first side. Flip and cook for an additional 3-4 minutes for medium doneness, or to your preferred level of doneness. During the last minute of cooking, top each patty with shredded pepper jack cheese and cover to melt.
  4. Toast the buns
    While the burgers are cooking, lightly butter the inside of the hamburger buns and toast them on the grill or in a separate pan until golden brown, about 1 minute.
  5. Assemble the burgers
    Spread the spicy mayo on both sides of the toasted buns. Place a cheese-topped burger patty on each bottom bun. Top with sliced jalapeños, avocado slices, tomato slices, and shredded lettuce. Crown with the top bun and serve immediately.
  6. Serve and enjoy
    Serve the jalapeño burgers hot with your favorite sides like french fries, sweet potato fries, or a simple green salad. For an authentic Tex-Mex experience, add a side of tortilla chips and homemade salsa.
