
Italian Cassata Cake
Traditional Sicilian layered sponge cake with sweet ricotta filling

Prepare the sponge cakePreheat oven to 350°F (175°C). Line a 9-inch round cake pan with parchment paper. In a large bowl, beat the eggs and sugar for about 5 minutes until pale and tripled in volume. Fold in vanilla extract and sifted flour gently. Pour into the prepared pan and bake for 25-30 minutes until golden and springy to touch. Cool completely on a wire rack.

Make the ricotta fillingIn a large bowl, beat the drained ricotta with powdered sugar until smooth and creamy. Add cinnamon and fold in the chocolate chips, candied orange peel, and chopped pistachios. Mix gently until well combined, then refrigerate for 30 minutes to firm up.

Assemble the cakeSlice the cooled sponge cake horizontally into 3 equal layers. Place the bottom layer on a serving plate and brush generously with orange liqueur or simple syrup. Spread half of the ricotta filling evenly over the cake. Place the middle layer on top, brush with liqueur, and spread the remaining ricotta filling. Top with the final cake layer and press gently to set.

Prepare the icingIn a bowl, mix powdered sugar with lemon juice, adding the juice gradually until you reach a thick but pourable consistency. The icing should coat the back of a spoon but still flow slowly.

Decorate the cakePour the icing over the top of the cake, allowing it to drip slightly down the sides. Before it sets, decorate with candied fruits and chopped pistachios in a traditional pattern. For an authentic look, arrange candied fruits in a symmetrical design with bright colors.

Chill and serveRefrigerate the cassata for at least 4 hours or preferably overnight to allow the flavors to meld and the cake to set properly. Remove from the refrigerator 30 minutes before serving to take the chill off. Slice with a sharp knife dipped in hot water for clean cuts.
