
Irish Wheaten Bread
Traditional whole wheat soda bread with a hearty texture

Prepare the ovenPreheat your oven to 400°F (200°C). Lightly dust a baking sheet with flour or line it with parchment paper.

Mix the dry ingredientsIn a large bowl, combine the whole wheat flour, all-purpose flour, baking soda, and salt. Whisk together until thoroughly mixed.

Incorporate the butterAdd the cold butter cubes to the flour mixture. Using your fingertips, rub the butter into the flour until the mixture resembles coarse breadcrumbs.

Add wet ingredientsMake a well in the center of the flour mixture. Pour in the honey or molasses and buttermilk. If using an egg, add it now. Mix with a wooden spoon until a soft, sticky dough forms.

Shape the loafTurn the dough onto a floured surface and gently knead for about 30 seconds to bring it together. Shape into a round loaf about 8 inches in diameter. Be careful not to overwork the dough.

Score and garnishTransfer the loaf to the prepared baking sheet. Using a sharp knife, score a deep cross on top of the bread. If desired, sprinkle with rolled oats and seeds, pressing them gently into the surface.

Bake the breadBake for 35-40 minutes until the bread is golden brown and sounds hollow when tapped on the bottom. Cover with foil during the last 10 minutes if the top is browning too quickly.

Cool and serveTransfer to a wire rack and allow to cool for at least 20 minutes before slicing. Serve warm or at room temperature with butter, jam, or alongside soups and stews.
