Prepare the batterIn a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. Make a well in the center and add the milk, beaten egg, vegetable oil, and vanilla extract. Whisk until the batter is smooth with no lumps. Let the batter rest for 10 minutes.

Heat the panIf using an imagawayaki pan or takoyaki pan, preheat it over medium heat. If using a regular non-stick pan, heat it over medium heat. Lightly brush the cavities with vegetable oil to prevent sticking.

Cook the pancake shellsPour about 2 tablespoons of batter into each cavity until it's about 2/3 full. Allow the batter to cook for about 2 minutes until bubbles form on the surface and the edges start to dry out.

Add the fillingPlace about 1 tablespoon of sweet red bean paste in the center of each pancake. The paste should not touch the edges.

Cover and complete cookingPour another tablespoon of batter over the red bean paste to cover it completely. Cook for another 2-3 minutes until the bottom is golden brown.

Flip and finish cookingCarefully flip the pancakes and cook for an additional 2 minutes until both sides are golden brown and the pancake is cooked through. If using a specialized pan, follow the manufacturer's instructions for flipping.

Glaze and serveIf desired, brush the hot imagawayaki with a thin layer of honey for a subtle shine and sweetness. Transfer to a wire rack to cool slightly before serving. Imagawayaki is best enjoyed warm.
