  1. Prepare the Skyr base
    In a medium bowl, combine the Skyr yogurt with 2 tablespoons of honey and the vanilla extract. Stir until smooth and well combined. If the Skyr is too thick, you can thin it slightly with a tablespoon of milk.
  2. Prepare the berries
    In a separate bowl, gently toss the blueberries, strawberries, and raspberries with the remaining tablespoon of honey. Allow them to macerate for 5 minutes to release their natural juices.
  3. Toast the nuts
    In a small dry skillet over medium heat, lightly toast the almonds and pumpkin seeds until fragrant, about 2-3 minutes, stirring frequently to prevent burning. Remove from heat and let cool.
  4. Assemble individual servings
    Divide the Skyr mixture evenly among four serving bowls. Top each bowl with an equal portion of the berry mixture.
  5. Add the toppings
    Sprinkle each bowl with toasted almonds, pumpkin seeds, and chia seeds. Dust with a light sprinkle of cinnamon.
  6. Final touches
    Drizzle each bowl with a small amount of additional honey. Garnish with fresh mint leaves. Serve immediately or chill for up to 30 minutes before serving.
