
Icelandic Skyr with Berries
Creamy, protein-rich Icelandic yogurt with fresh mixed berries

Prepare the Skyr baseIn a medium bowl, combine the Skyr yogurt with 2 tablespoons of honey and the vanilla extract. Stir until smooth and well combined. If the Skyr is too thick, you can thin it slightly with a tablespoon of milk.

Prepare the berriesIn a separate bowl, gently toss the blueberries, strawberries, and raspberries with the remaining tablespoon of honey. Allow them to macerate for 5 minutes to release their natural juices.

Toast the nutsIn a small dry skillet over medium heat, lightly toast the almonds and pumpkin seeds until fragrant, about 2-3 minutes, stirring frequently to prevent burning. Remove from heat and let cool.

Assemble individual servingsDivide the Skyr mixture evenly among four serving bowls. Top each bowl with an equal portion of the berry mixture.

Add the toppingsSprinkle each bowl with toasted almonds, pumpkin seeds, and chia seeds. Dust with a light sprinkle of cinnamon.
