  1. Activate the yeast
    In a small bowl, combine the lukewarm water with sugar and yeast. Stir gently and let it sit for 5-10 minutes until foamy and activated. If the mixture doesn't foam, your yeast might be dead, and you'll need to start over with fresh yeast.
  2. Mix the dry ingredients
    In a large mixing bowl, combine the flour, salt, and any optional dried herbs. If using garlic, add it now. Create a well in the center of the dry ingredients.
  3. Form the dough
    Pour the activated yeast mixture and olive oil into the well. Using a wooden spoon, gradually mix the wet ingredients into the dry until a shaggy dough forms. Then, transfer to a floured surface and knead for 8-10 minutes until smooth and elastic. The dough should spring back when poked gently.
  4. First rise
    Place the dough in a lightly oiled bowl, turning once to coat both sides. Cover with plastic wrap or a damp kitchen towel and let rise in a warm, draft-free place for 1-2 hours, or until doubled in size.
  5. Divide and shape
    Once risen, gently punch down the dough to release air bubbles. Transfer to a floured surface and divide into two equal portions. Shape each portion into a ball by tucking the edges underneath. Cover with a kitchen towel and let rest for 30 minutes.
  6. Prepare for baking
    Preheat your oven to its highest temperature (usually 475-500°F/245-260°C) with a pizza stone or inverted baking sheet inside for at least 30 minutes. Dust your work surface with flour and stretch or roll each dough ball into a 12-inch circle, creating a slight rim around the edge for the crust.
  7. Transfer and top
    Sprinkle a pizza peel or the back of a baking sheet with semolina or cornmeal. Transfer your stretched dough onto it, making sure it slides easily. Add your desired toppings, being careful not to overload the pizza which can make it soggy.
  8. Bake to perfection
    Carefully slide the topped pizza onto the preheated stone or baking sheet. Bake for 10-15 minutes until the crust is golden brown and the cheese (if using) is bubbly. Remove from oven, let cool slightly before slicing and serving.
