  1. Prepare the meat mixture
    In a large bowl, combine the ground pork, brown sugar, soy sauce, vinegar, minced garlic, paprika, black pepper, salt, red pepper flakes (if using), and annatto oil. Mix thoroughly until all ingredients are well incorporated. For best results, use your hands to mix, ensuring the seasonings are evenly distributed.
  2. Marinate the mixture
    Cover the bowl with plastic wrap and refrigerate the mixture for at least 1 hour, preferably overnight. This allows the flavors to meld together and penetrate the meat thoroughly.
  3. Shape the longganisa
    If using sausage casings, stuff the meat mixture into the casings and tie off into 3-inch links. If not using casings, take about 2-3 tablespoons of the mixture and shape into small logs about 3 inches long. Wrap each log tightly in plastic wrap, twisting the ends to secure the shape. Continue until all the mixture is used.
  4. Refrigerate or freeze
    Place the wrapped longganisa in the refrigerator for up to 3 days if you plan to cook them soon, or freeze for up to 3 months for longer storage. If freezing, place them in a freezer-safe container or bag.
  5. Cook the longganisa
    When ready to cook, unwrap the longganisa and place in a pan with 1/4 cup of water. Cover and simmer over medium heat until the water evaporates, about 5-7 minutes. Add the cooking oil and continue to cook, turning occasionally, until the longganisa is browned and fully cooked, about 5 more minutes.
  6. Serve hot
    Serve the longganisa hot with garlic fried rice (sinangag) and a fried egg (itlog) for a traditional Filipino breakfast called 'Longsilog'. Garnish with sliced tomatoes and a dipping sauce of vinegar with minced garlic and chili peppers if desired.
