
Homemade Donuts
Fluffy, golden-brown donuts with a sweet glaze

Prepare the yeastIn a small bowl, combine the warm milk (110°F-115°F), 1 teaspoon of sugar from the measured amount, and the yeast. Stir gently and let sit for 5-10 minutes until foamy and activated.

Make the doughIn a large mixing bowl, combine 2 cups of flour, the remaining sugar, salt, and nutmeg. Add the activated yeast mixture, melted butter, eggs, and vanilla extract. Beat on medium speed for 2 minutes. Gradually add the remaining flour until a soft dough forms.

Knead and riseTurn the dough onto a floured surface and knead for 6-8 minutes until smooth and elastic. Place in a greased bowl, turning once to grease the top. Cover with a clean kitchen towel and let rise in a warm place for 1 hour, or until doubled in size.

Shape the donutsPunch down the dough and turn onto a floured surface. Roll out to 1/2-inch thickness. Using a 3-inch round cutter, cut out circles. Use a 1-inch cutter to remove centers for the holes. Place the donuts and holes on parchment-lined baking sheets. Cover and let rise for 30-45 minutes until puffy.

Prepare for fryingWhile the donuts are rising, heat oil in a deep fryer or heavy pot to 350°F. Line a baking sheet with paper towels for draining. Prepare the glaze by whisking together powdered sugar, milk, and vanilla extract in a shallow bowl until smooth.

Fry the donutsCarefully slide a few donuts into the hot oil using a slotted spoon. Fry for 1-2 minutes per side until golden brown. Remove with a slotted spoon and place on paper towels to drain excess oil. Fry the donut holes for about 1 minute, turning occasionally.

Glaze the donutsWhile still warm, dip one side of each donut into the glaze, then place glazed-side up on a wire rack set over a baking sheet to catch drips. For a fully glazed donut, dip the entire donut in the glaze and turn to coat both sides. Allow excess to drip off before placing on the rack.

Serve and enjoyLet the glaze set for about 10 minutes before serving. Donuts are best enjoyed fresh and warm, but can be stored in an airtight container at room temperature for 1-2 days.
