    In a small bowl, mix the mayonnaise with a dash of hot sauce and the Cajun seasoning if using. Spread the bottom half of each bread slice with the mayonnaise mixture. Spread the Creole mustard on the top halves.
  3. Layer the head cheese
    Arrange the sliced hog's head cheese evenly across the bottom halves of the bread. Depending on the size of your bread, use 3-4 slices per sandwich, making sure to cover the bread completely.
