Instructions

  1. Prepare the herb butter
In a medium bowl, combine the softened butter, chopped parsley, chives, thyme, minced garlic, lemon zest, lemon juice, salt, pepper, and red pepper flakes (if using). Mix thoroughly until all ingredients are well incorporated. Set aside at room temperature.
  2. Prepare the grill
Preheat your grill to medium-high heat (around 400°F/200°C). Make sure the grates are clean and lightly oiled to prevent sticking.
  3. Prepare the corn
Lightly brush each ear of corn with a small amount of the herb butter mixture. This initial coating will help the corn start to caramelize on the grill.
  4. Grill the corn
Place the corn directly on the grill grates. Close the lid and grill for 2-3 minutes. Rotate the corn a quarter turn and grill for another 2-3 minutes. Continue rotating until all sides are lightly charred and the kernels are tender, about 8-10 minutes total.
  5. Apply herb butter
Remove the grilled corn from the heat and immediately brush generously with the remaining herb butter, making sure to get the butter into all the nooks between kernels. The heat from the corn will melt the butter and allow the herbs to release their aromatic oils.
  6. Finish and serve
If using Parmesan cheese, sprinkle it over the buttered corn while still hot. Serve immediately while the corn is hot and the butter is melted.
