
Hamburger with Chimichurri

Prepare the chimichurri sauceIn a medium bowl, combine the chopped parsley, oregano, minced garlic, olive oil, red wine vinegar, red pepper flakes, and 1/2 teaspoon salt. Stir well and let sit for at least 10 minutes to allow the flavors to meld. This can be made up to 24 hours in advance and stored in the refrigerator.

Form the burger pattiesIn a large bowl, gently combine the ground beef with salt and pepper. Do not overmix. Divide the mixture into 4 equal portions and form into patties about 3/4-inch thick, making a slight depression in the center of each patty with your thumb to prevent bulging during cooking.

Preheat the grillHeat a grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking. If using a regular pan, add 1 tablespoon of oil to the pan and heat until shimmering.

Cook the burgersPlace the patties on the hot grill and cook for about 4-5 minutes on the first side. Flip and cook for an additional 3-4 minutes for medium, or until desired doneness is reached. If using cheese, add it to the patties during the final minute of cooking to allow it to melt.

Toast the bunsDuring the last minute of cooking the patties, place the buns cut-side down on the grill to toast lightly, about 30 seconds.

Assemble the burgersPlace each burger patty on a toasted bun bottom. Top generously with chimichurri sauce, then add sliced red onion and tomato. Cover with the bun top and serve immediately while hot.
