  1. Prepare the fish
    Ensure the fish is thoroughly cleaned with scales, gills and innards removed. Rinse under cold water and pat dry with paper towels. Using a sharp knife, make 3-4 diagonal slashes on each side of the fish, cutting down to the bone.
  2. Season the fish
    Rub the fish inside and out with olive oil. Season generously with salt and pepper, making sure to get some into the slashes and cavity. Stuff the cavity with sliced garlic, lemon rounds, and fresh herb sprigs.
  3. Prepare the grill
    Preheat your grill to medium-high heat (around 400°F). Clean the grates thoroughly and oil them to prevent sticking. If using a charcoal grill, create a two-zone fire with hot and medium heat areas.
  4. Grill the fish
    Place the fish on the preheated grill. Cook for 5-7 minutes on the first side without moving it. Carefully flip the fish using two spatulas, and cook for another 5-7 minutes on the second side. The fish is done when the flesh is opaque and flakes easily with a fork.
  5. Add finishing touches
    Just before removing from the grill, drizzle the fish with the white wine and allow it to steam and flavor the fish for 1 minute. Carefully transfer the grilled fish to a serving platter.
  6. Serve
    Drizzle the fish with additional olive oil, sprinkle with chopped parsley and red pepper flakes if using. Serve immediately with lemon wedges on the side for squeezing over the fish.
