  1. Prepare the marinade
    In a bowl, combine olive oil, lemon juice, minced garlic, rosemary, thyme, salt, pepper, and lemon zest. Whisk until well blended.
  2. Marinate the tuna
    Place tuna steaks in a shallow dish and pour the marinade over them. Turn to coat both sides. Cover and refrigerate for at least 30 minutes, but no longer than 1 hour as the acid in the lemon juice can start to 'cook' the fish.
  3. Prepare the grill
    Preheat your grill to high heat (450-500°F). Oil the grates to prevent sticking. If using a grill pan, heat it over high heat until very hot.
  4. Grill the tuna
    Remove tuna from the marinade, letting excess drip off. Place tuna steaks on the hot grill and cook for 1-2 minutes per side for rare (cool, red center), 3 minutes per side for medium-rare (warm, red center), or 5 minutes per side for medium (warm, pink center). Avoid overcooking as tuna becomes dry quickly.
  5. Rest the tuna
    Transfer the grilled tuna to a cutting board and let rest for 5 minutes to allow the juices to redistribute throughout the fish.
  6. Slice and serve
    If desired, slice the tuna steaks against the grain into 1/2-inch thick slices. Arrange on plates, sprinkle with capers if using, and serve immediately with lemon wedges.
