  1. Prepare the steak
    Pat the steak dry with paper towels. Rub with 1 tablespoon olive oil and season generously with salt and pepper. Let sit at room temperature for 15 minutes before grilling.
  2. Make the vinaigrette
    In a small bowl, whisk together balsamic vinegar, Dijon mustard, minced garlic, honey, salt, and pepper. Slowly stream in 1/3 cup olive oil while whisking constantly until emulsified. Set aside.
  3. Grill the steak
    Preheat grill or grill pan to high heat. Grill steak for 4-5 minutes per side for medium-rare, or until desired doneness is reached. Transfer to a cutting board and let rest for 5-10 minutes before slicing thinly against the grain.
  4. Prepare the salad
    In a large bowl, combine mixed greens, cherry tomatoes, red onion, and toss with half of the vinaigrette.
  5. Assemble and serve
    Divide the dressed salad among four plates. Top each with sliced steak, avocado, and crumbled blue cheese. Drizzle with remaining vinaigrette and serve immediately.
