  1. Prepare the lobster tails
    Using kitchen shears, cut down the center of the top of each lobster shell, stopping at the tail. Carefully separate the meat from the shell using your fingers or a spoon, keeping it attached at the tail end. Lift the meat up and place it on top of the shell.
  2. Make the herb butter
    In a small bowl, combine softened butter, minced garlic, lemon juice, parsley, thyme, paprika, salt, and pepper. Mix until all ingredients are well incorporated to create a smooth compound butter.
  3. Season the lobster
    Brush the lobster meat with olive oil, then spread the herb butter mixture evenly over the exposed meat of each lobster tail. Allow to rest at room temperature for 5 minutes while you prepare the grill.
  4. Preheat the grill
    Preheat your grill to medium-high heat (approximately 400-450°F). Clean and oil the grates to prevent sticking.
  5. Grill the lobster tails
    Place the lobster tails on the grill, meat side up. Close the lid and grill for 5-6 minutes. The shells will turn bright red and the meat should be opaque and firm when done. The internal temperature should reach 140°F.
  6. Rest and serve
    Remove the lobster tails from the grill and let them rest for 2-3 minutes. Serve immediately with additional melted butter and lemon wedges on the side.
