  1. Prepare the halloumi
    Pat the halloumi slices dry with paper towels. If using za'atar, sprinkle it evenly over both sides of the cheese slices. Let them sit at room temperature for 5 minutes.
  2. Grill the cheese
    Heat a non-stick grill pan or skillet over medium-high heat. Brush the halloumi slices lightly with olive oil and grill for 2-3 minutes on each side until golden brown with distinct grill marks. Remove from heat.
  3. Toast the bread
    Lightly brush the ciabatta or sourdough with olive oil and place on the grill pan for 1-2 minutes until lightly toasted and warm. Remove and set aside.
  4. Prepare the dressing
    In a small bowl, whisk together 2 tablespoons olive oil, lemon juice, chopped mint, salt, and pepper. If using honey, add it to the dressing and mix well.
  5. Assemble the sandwiches
    Spread a thin layer of the dressing on the bottom half of each bread piece. Layer with arugula leaves, tomato slices, avocado slices, and red onion. Place 2 slices of the grilled halloumi on each sandwich and drizzle with a little more dressing if desired.
  6. Finish and serve
    Close the sandwiches with the top bread halves, pressing down gently. If desired, cut in half diagonally for easier handling. Serve immediately while the halloumi is still warm and slightly soft.
