  1. Prepare the crust
    Preheat oven to 350°F (175°C). In a medium bowl, combine gingerbread cookie crumbs with melted butter until evenly moistened. Press mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool completely.
  2. Make the filling
    Reduce oven temperature to 325°F (165°C). In a large mixing bowl, beat cream cheese until smooth and fluffy, about 3 minutes. Gradually add sugar and beat until well incorporated. Add eggs one at a time, beating well after each addition. Mix in molasses, sour cream, and vanilla extract.
  3. Add spices
    In a small bowl, combine ground ginger, cinnamon, nutmeg, and cloves. Add to the cream cheese mixture and beat until fully incorporated, scraping down the sides of the bowl as needed to ensure even mixing.
  4. Prepare water bath
    Wrap the outside of the springform pan with a double layer of aluminum foil to prevent water from seeping in. Place the pan in a larger roasting pan. Pour the cheesecake batter into the prepared crust. Fill the roasting pan with about 1 inch of hot water.
  5. Bake the cheesecake
    Carefully transfer the water bath with the cheesecake to the oven. Bake for 60 minutes, or until the edges are set but the center still has a slight jiggle. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour to prevent cracking.
  6. Chill and set
    Remove the cheesecake from the water bath and refrigerate for at least 4 hours or overnight to fully set. Run a knife around the edges before removing the springform ring.
  7. Garnish and serve
    Before serving, top the cheesecake with whipped cream and sprinkle with crystallized ginger. Slice with a warm, clean knife for the neatest portions.
