
German Apple Cake
A moist, cinnamon-spiced cake loaded with fresh apples

Prepare the applesPeel, core and slice the apples thinly. Toss with lemon juice in a medium bowl to prevent browning. Set aside.

Prepare the baking panPreheat oven to 350°F (175°C). Grease and flour a 9-inch springform pan. Line the bottom with parchment paper for easy removal.

Mix dry ingredientsIn a medium bowl, whisk together flour, baking powder, salt, and 1 teaspoon of cinnamon until well combined.

Prepare the batterIn a large bowl, cream butter and granulated sugar until light and fluffy, about 3-4 minutes. Beat in eggs one at a time, then stir in vanilla extract. Gradually fold in the flour mixture until just combined. Do not overmix.

Assemble the cakeSpread half of the batter into the prepared pan. Arrange half of the apple slices over the batter. Spread the remaining batter over the apples, then arrange the remaining apple slices on top in a decorative circular pattern.

Add toppingIn a small bowl, mix brown sugar with remaining 1/2 teaspoon cinnamon. Sprinkle over the top of the cake. If using, scatter sliced almonds on top.

Bake the cakeBake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown and the apples tender.

Cool and serveAllow the cake to cool in the pan for 15 minutes, then remove the sides of the springform pan. Let cool completely before serving. Dust with powdered sugar just before serving if desired.
