
Garlic Parmesan Hasselback Potatoes

Prepare the potatoesPreheat oven to 425°F (220°C). Place each potato between two wooden spoons or chopsticks to prevent cutting all the way through. Make thin slices (about 1/8 inch apart) across each potato.

Create the garlic butter mixtureIn a small bowl, combine the melted butter, olive oil, minced garlic, 1/4 cup of the Parmesan cheese, thyme, rosemary, salt, and pepper. Mix well until all ingredients are thoroughly incorporated.

Season the potatoesPlace the sliced potatoes on a baking sheet lined with parchment paper. Carefully brush the potatoes with half of the garlic butter mixture, making sure to get some between the slices. Reserve the remaining mixture.

First bakeCover the baking sheet with aluminum foil and bake for 30 minutes. This allows the potatoes to become tender while retaining moisture.

Second bake with cheeseRemove the foil and brush potatoes with the remaining garlic butter mixture. Sprinkle the remaining Parmesan cheese over the potatoes, ensuring some falls between the slices. If using, sprinkle breadcrumbs on top for extra crispiness.

Finish bakingReturn the potatoes to the oven, uncovered, and bake for another 25-30 minutes until they are golden brown and crispy on the outside, and the cheese is melted and bubbly.

Garnish and serveRemove from the oven and let cool for 5 minutes. Sprinkle with fresh parsley and additional Parmesan cheese if desired. Serve hot as a side dish to your favorite main course.
