  1. Prepare the mushrooms
    Clean the shiitake mushrooms by gently wiping them with a damp paper towel. Remove the stems and slice larger mushrooms in half, keeping smaller ones whole. Allow mushrooms to dry completely before cooking.
  2. Heat the pan
    Heat a large skillet over medium-high heat. Add the olive oil and 2 tablespoons of butter until the butter is melted and begins to foam slightly.
  3. Sauté the mushrooms
    Add the shiitake mushrooms to the hot pan in a single layer. Do not overcrowd the pan; cook in batches if necessary. Allow the mushrooms to cook undisturbed for 3-4 minutes until they begin to brown on one side.
  4. Add the garlic and seasonings
    Stir the mushrooms and add the minced garlic, thyme leaves, salt, black pepper, and red pepper flakes if using. Cook for 2 minutes until the garlic becomes fragrant but not browned.
  5. Finish with butter and soy sauce
    Reduce heat to medium-low and add the remaining 2 tablespoons of butter and soy sauce. Stir continuously until the butter is melted and the mushrooms are glossy and coated evenly, about 2-3 minutes.
  6. Brighten with lemon and garnish
    Remove the skillet from heat and sprinkle with fresh lemon juice. Toss the mushrooms to coat evenly. Garnish with chopped fresh parsley before serving.
