  1. Prepare the baking pan
    Preheat oven to 350°F (175°C). Line a 9x9-inch (23x23cm) baking pan with parchment paper, leaving an overhang on the sides to lift the finished brownies out easily.
  2. Melt the chocolate and butter
    In a medium heatproof bowl set over a pan of barely simmering water (or using a microwave in 30-second bursts), melt the dark chocolate and butter together, stirring occasionally until smooth. Remove from heat and let cool slightly.
  3. Mix the wet ingredients
    In a large bowl, whisk together the sugar, eggs, and vanilla extract until well combined. Gradually add the melted chocolate mixture, whisking until smooth and glossy.
  4. Add the dry ingredients
    Sift the flour, cocoa powder, and salt directly into the bowl with the wet ingredients. Fold gently with a rubber spatula until just combined - don't overmix. Fold in the chocolate chips and walnuts if using.
  5. Bake the brownies
    Pour the batter into the prepared pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs attached. Be careful not to overbake, as this will make the brownies dry rather than fudgy.
  6. Cool and cut
    Allow the brownies to cool completely in the pan on a wire rack. Once cooled, lift out using the parchment paper overhang and cut into 16 squares with a sharp knife. For cleaner cuts, refrigerate for 30 minutes before cutting.
