  1. Prepare the potatoes
    Place the peeled and cut potatoes in a large pot and cover with cold water by at least 1 inch. Add 1 tablespoon of kosher salt to the water. Bring to a boil over high heat, then reduce to a simmer and cook until the potatoes are completely tender and easily pierced with a fork, about 15-20 minutes.
  2. Warm the dairy
    While the potatoes are cooking, combine the milk, heavy cream, butter, and if using, the garlic cloves and thyme sprigs in a small saucepan. Heat over low heat until the butter is melted and the mixture is warm but not boiling. Remove from heat, discard the garlic and thyme if used, and cover to keep warm.
  3. Dry the potatoes
    When the potatoes are done, drain them thoroughly in a colander. Return them to the empty pot and place over low heat for about 1-2 minutes, stirring occasionally, to evaporate any excess moisture. This step is crucial for a dry, fluffy purée.
  4. Process the potatoes
    For the smoothest texture, pass the hot potatoes through a food mill or ricer back into the pot. Alternatively, use a potato masher for a slightly more rustic texture. Never use a food processor or blender, as this will make the potatoes gluey.
  5. Incorporate the dairy
    Gradually add the warm milk-butter-cream mixture to the potatoes, folding gently with a wooden spoon or silicone spatula after each addition. This gradual incorporation is key to achieving the perfect consistency.
  6. Season and finish
    Add the white pepper and freshly grated nutmeg. Taste and adjust salt as needed. For the ultimate silky texture, you can pass the mixture through a fine-mesh sieve, but this is optional for a traditional French purée.
  7. Serve with style
    Transfer to a warm serving dish. Using the back of a spoon, create decorative swirls on the surface. Garnish with finely chopped chives and an additional small pat of butter in the center that will melt beautifully over the hot purée. Serve immediately.
