  1. Prepare the puff pastry
    Unroll the puff pastry sheets and cut two 10-inch (25cm) circles. Place one circle on a baking sheet lined with parchment paper, and refrigerate both circles while preparing the filling.
  2. Make the frangipane filling
    In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in 2 eggs, one at a time, ensuring each is fully incorporated. Add the ground almonds, flour, almond extract, and rum (if using). Mix until you have a smooth, creamy paste.
  3. Assemble the galette
    Remove both pastry circles from refrigerator. Spread the frangipane mixture evenly over the pastry circle on the baking sheet, leaving a 1-inch border around the edge. Place the fève or bean somewhere in the filling. Brush the border with cold water, then place the second pastry circle on top and press edges firmly to seal.
  4. Create the decorative pattern
    Using a small, sharp knife, create a decorative pattern on the top of the galette by making shallow incisions in a spiral or scalloped pattern. Be careful not to cut all the way through the pastry. Then, use the back of the knife to create small indentations around the edge to seal and create a scalloped border.
  5. Prepare for baking
    Beat the remaining egg and brush it over the top of the galette for a golden finish. Using a knife, make a small hole in the center of the galette to allow steam to escape during baking. Refrigerate the assembled galette for 30 minutes to firm up.
  6. Bake the galette
    Preheat the oven to 375°F (190°C). After chilling, brush the galette again with egg wash and use a knife to make a few small slits in the top to vent steam. Bake for 30-35 minutes until the pastry is risen and golden brown.
  7. Finish and serve
    Once baked, remove from the oven and let cool slightly on a wire rack. Dust with powdered sugar just before serving. Traditionally, the galette is served warm with the paper crown placed on top. The person who finds the fève in their slice becomes 'king' or 'queen' for the day and wears the crown.
