Instructions

  1. Prepare the rutabaga
Peel the rutabaga and cut into 1-inch cubes. Place in a large pot and cover with cold water. Bring to a boil and cook until very tender, about 20-25 minutes. Test with a fork to ensure they're completely soft.
  2. Mash the vegetables
Drain the rutabaga thoroughly and return to the pot. Mash while still hot until smooth, or use a food processor for an extra smooth texture. Allow to cool slightly.
  3. Prepare the mixture
In a large bowl, combine the mashed rutabaga with butter, heavy cream, beaten eggs, maple syrup, nutmeg, ginger, salt, white pepper, and milk. Mix thoroughly until all ingredients are well incorporated.
  4. Prepare the baking dish
Preheat oven to 350°F (175°C). Butter a 2-quart (2-liter) casserole dish. Sprinkle half of the breadcrumbs on the bottom and sides of the dish.
  5. Assemble the casserole
Pour the rutabaga mixture into the prepared casserole dish. Smooth the top with a spatula. Mix the remaining breadcrumbs with brown sugar (if using) and sprinkle evenly over the top of the casserole.
  6. Bake to perfection
Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the casserole is set. The center should be firm and the edges slightly pulled away from the sides of the dish.
