  1. Prepare the apple mixture
    In a large saucepan, combine the diced apples, granulated sugar, cinnamon, cardamom, and lemon juice. Cook over medium heat for about 15 minutes, stirring occasionally, until the apples are soft but still hold their shape. Remove from heat and let cool completely.
  2. Make the toasted breadcrumbs
    In a large skillet, melt the butter over medium heat. Add the breadcrumbs and brown sugar, stirring constantly until the mixture turns golden brown and becomes crispy, about 5-7 minutes. Be careful not to burn the crumbs. Transfer to a plate to cool.
  3. Whip the cream
    In a large bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Be careful not to over-whip.
  4. Assemble the layers
    In a clear trifle dish or individual serving glasses, create alternating layers starting with the toasted breadcrumbs, then apple mixture, then whipped cream. Repeat the layers, finishing with a layer of whipped cream on top.
  5. Garnish and chill
    Sprinkle the chopped roasted almonds on top for garnish. You can also add a light dusting of cinnamon if desired. Refrigerate for at least 2 hours before serving to allow the flavors to meld together.
