
Creamed Spinach

Blanch the spinachBring a large pot of salted water to a boil. Add the spinach and cook for 30 seconds until wilted. Drain immediately and transfer to a bowl of ice water to stop the cooking process. Once cool, drain thoroughly and squeeze out excess water. Roughly chop the spinach.

Sauté the aromaticsIn a large skillet, melt the butter over medium heat. Add the diced onion and cook for 3-4 minutes until softened and translucent. Add the minced garlic and cook for an additional 30 seconds until fragrant.

Create the cream baseReduce heat to medium-low. Add the heavy cream and cream cheese to the skillet, stirring constantly until the cream cheese is fully melted and incorporated. Simmer gently for 2-3 minutes until the sauce begins to thicken slightly.

Season the sauceAdd the ground nutmeg, salt, and black pepper to the cream sauce. Stir to combine, tasting and adjusting seasonings if necessary.

Incorporate the spinachAdd the chopped spinach to the cream sauce, stirring to coat the spinach evenly. Cook for 2-3 minutes until the spinach is heated through and has absorbed some of the sauce.

Finish with cheeseSprinkle the grated Parmesan cheese over the spinach and stir until melted and incorporated. Remove from heat once the mixture is creamy and the cheese is fully melted.
