  1. Prepare the Batter
    Melt the butter in a small saucepan over low heat until it turns slightly golden brown with a nutty aroma (this is called beurre noisette). Remove from heat and let cool slightly. In a large bowl, whisk together eggs, sugar, honey, vanilla extract, and lemon zest until the mixture is pale and thick, about 2-3 minutes.
  2. Mix Dry Ingredients
    In a separate bowl, sift together the flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined. Do not overmix. Slowly pour in the cooled melted butter and fold until incorporated. The batter should be smooth and have a ribbon-like consistency.
  3. Rest the Batter
    Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably 2 hours. This resting time is crucial as it allows the batter to thicken and develop flavor, which will give your madeleines their characteristic bump.
  4. Prepare the Molds
    Preheat your oven to 375°F (190°C). Brush the madeleine molds with melted butter and dust lightly with flour, tapping out any excess. This ensures the madeleines will release easily after baking.
  5. Fill the Molds
    Remove the batter from the refrigerator. Fill each madeleine mold about 3/4 full with batter. Don't spread the batter as it will spread naturally during baking. You may need to bake in batches depending on your mold size.
  6. Bake to Perfection
    Bake in the preheated oven for 8-10 minutes, or until the edges are golden brown and the centers spring back when lightly touched. Do not overbake or they will become dry.
  7. Cool and Unmold
    Remove from the oven and immediately tap the edge of the pan against the counter to loosen the madeleines. Let cool in the pan for 2 minutes, then carefully remove and place on a wire rack to cool completely.
  8. Serve
    Once cooled, dust the madeleines with powdered sugar. They are best enjoyed the day they're made, preferably while still slightly warm, alongside a cup of tea or coffee.
