  1. Prepare the dough
    In a medium saucepan over medium-high heat, combine water, butter, salt, and 1 tablespoon sugar. Bring to a boil, then remove from heat. Immediately stir in flour until a dough forms and pulls away from the sides of the pan.
  2. Add eggs and vanilla
    Allow the dough to cool for 5 minutes. Add eggs one at a time, mixing well after each addition until fully incorporated. The dough should be smooth and have a pipe-able consistency. Stir in vanilla extract.
  3. Prepare for frying
    Heat oil in a large, deep skillet or pot to 375°F (190°C). In a separate shallow dish, mix ¾ cup sugar and cinnamon. Transfer the dough to a piping bag fitted with a large star tip.
  4. Pipe and fry the churros
    Carefully pipe 4-inch strips of dough directly into the hot oil, cutting the end with scissors. Fry 3-4 churros at a time, turning occasionally until golden brown, about 2 minutes per side. Do not overcrowd the pan.
  5. Drain and coat
    Remove churros with a slotted spoon and drain briefly on paper towels. While still hot, roll each churro in the cinnamon-sugar mixture until completely coated.
  6. Serve with dipping sauces
    Arrange churros on a serving plate. If desired, serve with chocolate sauce and/or dulce de leche in small bowls for dipping. Churros are best enjoyed while still warm and crispy.
