Prepare the batterIn a large mixing bowl, whisk the egg whites until foamy but not stiff. Gradually add the sugar, whisking continuously until the mixture is smooth. Stir in the melted butter, vanilla extract, and almond extract if using.

Mix dry ingredientsSift the flour and salt together, then gradually fold into the wet ingredients until you have a smooth, thin batter. Cover and refrigerate for at least 30 minutes to allow the batter to relax and hydrate.

Preheat and preparePreheat your oven to 375°F (190°C). Line a baking sheet with a silicone mat or parchment paper. Have a wooden spoon handle, cannoli form, or thin metal rod ready for shaping the cookies.

Bake the cookiesDrop 1 tablespoon of batter onto the prepared baking sheet, and using the back of a spoon, spread into a thin 4-inch circle. Bake only 2-3 cookies at a time, as you'll need to shape them quickly while hot. Bake for 5-7 minutes until the edges are golden brown.

Roll the cookiesWorking quickly, remove one cookie at a time from the oven. While it's still hot and pliable, use a thin spatula to lift the cookie and immediately wrap it around the wooden spoon handle or cannoli form. Hold for a few seconds until set, then slide off and place on a wire rack to cool completely. If the cookie hardens before you can roll it, return it to the oven for 30 seconds to soften.

Repeat the processContinue baking and shaping cookies in small batches until all the batter is used. Allow cookies to cool completely on a wire rack before decorating or storing.

Optional decorationIf desired, dip the ends of the cooled cookies in melted chocolate and sprinkle with chopped pistachios. Place on parchment paper until the chocolate sets completely.
