Ingredients
Instructions
-
Prepare the crustPreheat oven to 350°F (175°C). In a medium bowl, combine chocolate cookie crumbs, melted butter, and granulated sugar. Press mixture firmly into the bottom and up the sides of a 9-inch pie plate. Bake for 10 minutes, then cool on a wire rack while preparing the filling.
-
Make the pumpkin fillingIn a large bowl, whisk together pumpkin puree, brown sugar, eggs, 1 cup of the heavy cream, cinnamon, ginger, nutmeg, cloves, and salt until smooth and well combined. Set aside.
-
Prepare the chocolate mixtureIn a microwave-safe bowl, combine chopped chocolate with the remaining 1/4 cup heavy cream. Microwave in 30-second intervals, stirring between each, until chocolate is melted and mixture is smooth. Stir in cocoa powder until fully incorporated.
-
Create the marbled effectPour 2/3 of the pumpkin filling into the cooled crust. Dollop the chocolate mixture over the pumpkin layer. Pour the remaining pumpkin filling on top. Using a knife or skewer, gently swirl the layers together to create a marbled effect, being careful not to disturb the crust.
-
Bake the piePlace the pie on a baking sheet and bake at 350°F (175°C) for 40-45 minutes, or until the center is just set but still slightly jiggly. The filling will continue to set as it cools.
-
Cool and chillAllow the pie to cool completely on a wire rack for at least 2 hours. Then refrigerate for at least 4 hours or overnight before serving for best flavor and texture.
