
Chicken Stroganoff
Creamy chicken with mushrooms in a tangy sour cream sauce

Season the chickenIn a medium bowl, combine flour, paprika, garlic powder, salt, and pepper. Add chicken strips and toss until evenly coated with the seasoning mixture.

Sauté the chickenHeat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken strips and cook for 4-5 minutes until golden brown and cooked through. Transfer to a plate and set aside.

Cook the vegetablesIn the same skillet, add the remaining tablespoon of olive oil. Add onions and mushrooms, cooking for 5-6 minutes until softened and lightly browned. Add minced garlic and cook for another 30 seconds until fragrant.

Prepare the saucePour chicken broth into the skillet, scraping up any browned bits from the bottom of the pan. Stir in Dijon mustard and bring to a simmer. Reduce heat to low and let the sauce reduce slightly for about 3 minutes.

Finish the stroganoffRemove the skillet from heat and let cool for 1 minute. Gradually stir in the sour cream until well incorporated. Return the skillet to low heat, being careful not to boil to prevent the sauce from curdling.

Combine and serveReturn the cooked chicken to the skillet, along with any accumulated juices. Gently stir to coat with the sauce and heat through for 2-3 minutes. Taste and adjust seasoning if needed. Sprinkle with fresh parsley before serving over hot egg noodles or rice.
