Warming Japanese hot pot with tender chicken and grated daikon

Prepare the daikonPeel the daikon radish and grate it using a box grater or food processor. Squeeze out some of the excess liquid by gently pressing the grated daikon in a clean kitchen towel or with your hands.

Make the broth baseIn a large pot or donabe (Japanese clay pot), combine the dashi stock, soy sauce, mirin, sake, and salt. Bring to a gentle simmer over medium heat. Add the grated ginger and stir to combine.

Add the chicken and vegetablesPlace the chicken pieces into the simmering broth. Add the shiitake mushrooms, napa cabbage, and tofu. Cover and simmer for about 15 minutes, or until the chicken is almost cooked through.

Create the mizore effectGently spread the grated daikon over the top of the hot pot ingredients. The white daikon resembles snow (mizore in Japanese), which gives this dish its name. Cover and simmer for another 10 minutes until the daikon is tender and slightly translucent.

Final seasoningsTaste the broth and adjust seasonings if needed. Sprinkle the sliced green onions over the top of the hot pot just before serving.

Serve family-styleBring the entire pot to the table and serve directly from the pot into individual bowls. Make sure each serving has a good mix of chicken, vegetables, tofu, and the flavorful broth with daikon.
