    If using a raw beet, wrap it in foil and roast at 400°F (200°C) for about 45-60 minutes until tender when pierced with a fork. Allow to cool completely, then peel and chop. Alternatively, use pre-cooked vacuum-packed beets to save time.
  2. Blend the base ingredients
    In a high-powered blender, combine the cooked beet, frozen cherries, frozen banana, Greek yogurt, and almond milk. Blend on high until smooth, adding more almond milk if needed to achieve desired consistency.
  3. Add flavorings
    Add the honey or maple syrup, chia seeds, and vanilla extract to the blender. Pulse a few times to incorporate all ingredients. The mixture should be thick enough to eat with a spoon but smooth enough to pour.
  4. Pour and prepare toppings
    Pour the smoothie mixture into two serving bowls. The consistency should be thicker than a regular smoothie, so it can support the toppings.
  5. Add toppings and serve
