  1. Prepare the carrots
    Preheat oven to 425°F (220°C). Peel the carrots and cut them into ½-inch thick sticks, approximately 3-4 inches long. Try to keep them uniform in size for even cooking.
  2. Season the carrot fries
    In a large bowl, toss the carrot sticks with olive oil, garlic powder, smoked paprika, cumin, salt, and black pepper until evenly coated.
  3. Arrange and bake
    Spread the seasoned carrot sticks in a single layer on a baking sheet lined with parchment paper, ensuring they don't overlap. Bake for 20-25 minutes, flipping halfway through, until the carrots are tender on the inside and crispy and caramelized on the outside.
  4. Make the garlic aioli
    While the carrots are baking, prepare the aioli. In a small bowl, combine the mayonnaise, minced garlic, lemon juice, Dijon mustard, and chopped parsley. Mix well and refrigerate until ready to serve.
  5. Serve
    Transfer the carrot fries to a serving dish, sprinkle with additional fresh parsley if desired, and serve immediately with the garlic aioli dipping sauce on the side.
