
Broiled Salmon with Miso
Savory glazed salmon with Japanese miso and ginger

Prepare the marinadeIn a small bowl, whisk together the white miso paste, mirin, sake, soy sauce, rice vinegar, grated ginger, honey, minced garlic, and sesame oil until smooth and well combined.

Marinate the salmonPlace the salmon fillets in a shallow dish, skin-side down. Pour two-thirds of the miso mixture over the salmon, reserving the remainder for glazing. Cover and refrigerate for at least 30 minutes, or up to 2 hours for a more intense flavor.

Prepare for broilingPreheat your broiler to high. Line a baking sheet with aluminum foil and lightly oil it to prevent sticking. Remove the salmon from the marinade, gently wiping off excess (but not all) marinade, and place skin-side down on the prepared baking sheet.

Broil the salmonPosition the rack about 6 inches from the heat source. Broil the salmon for 2-3 minutes, then brush with some of the reserved marinade. Continue broiling for another 5-7 minutes, or until the salmon is opaque and flakes easily with a fork. The top should be caramelized and slightly charred in spots.

Glaze and finishDuring the last minute of cooking, brush the salmon with the remaining marinade to create a final glaze. Keep a close eye to prevent burning, as the sugars in the miso mixture can caramelize quickly.

ServeTransfer the broiled salmon to serving plates. Garnish with sliced green onions and toasted sesame seeds. Serve immediately with steamed rice and vegetables for a complete meal.
